1. In a medium bowl, mash 2 bananas well. Stir in coconut milk, chia seeds, Sweet‘N Low®, vanilla, cinnamon, and salt.
2. Cover and refrigerate overnight.
3. To serve, slice remaining banana. Stir chia pudding well and divide between 4 small bowls. Top with coconut flakes and sliced banana.
