1. Line a baking sheet with parchment paper. Place two gummy bear molds (50 gummy bears per mold) on baking sheet.
2. In a small saucepan over medium-low heat, warm champagne, gelatin, and sweetener, whisking constantly, until completely dissolved. Remove from heat and whisk in extract and food coloring.
3. Transfer to a glass measuring cup with a spout (or a dropper if provided with molds). Carefully pour or drop champagne mixture into molds, filling right to the top then cleaning off any excess.
4. Place in refrigerator until completely set, about 15-20 minutes. Serve immediately or store in an airtight container in the refrigerator.
